Born and raised in Morelia, Michoacán Mexico I was surrounded by family home cooks throughout my life and, traveling to little towns around my city, I grew up enjoying authentic food.
I came to the United States in 2006, since then, it’s been a struggle to find those flavors that I grew up with. Mexican food is full of tradition, culture, love, and believe or not, it can be healthy.
Vegetables and fruits are available year-round and since the cost of meat is high, people rely on vegetarian dishes a few days a week to feed their families.
A home cook myself, I prepare the dishes that keep me connected with my culture. I won’t lie to you saying that it tastes just like the real deal, but I can promise you flavor.
So, I invite you to come along with me and discover the vegetarian/vegan side of Mexican cuisine and help the planet, one enchilada at a time.
